North Massapequa Fire Dept Annual Picnic at Marjorie Post Park Gazebo by AAA Royal Catering
On a beautiful afternoon in late September the North Massapequa Fire Dept celebrated their annual Firehouse picnic catered by AAA Royal Catering at the Marjorie Post Park Gazebo in Massapequa. In past years they ordered the “All American BBQ” and the “Aloha Hawaiian Luau” themed menus. This year they chose the Southern BBQ themed menu to accommodate 125 guests. The catering staff arrived at 10:30am to setup the buffet and the prepared menus would be served at 12:00pm.
The menu included a 50lb. whole roasted pig presentation that was carved tableside, fall off the bone barbecue ribs, sliced bbq beef brisket with our tangy mopping sauce, smoked sweet sausage with peppers and onions, pulled chicken, southern fried chicken, with fixins of garlic mashed potatoes, macaroni and cheese, rustic corn niblets and grilled vegetables with sides of our homemade creamy coleslaw, cornbread, barbecue buns to make sliders, fresh garden salad and a dessert of cookies and brownies.
The cook time takes 6 to 8 hours on some of these items. Preparation of this menu began early the day before at our kitchen facility with chef Jason trimming & applying spice rubs to all the meats. The pig itself was rubbed & injected with a sour orange mojo marinade to enhance the flavor. While the meats were resting chef Jason and crew prepared the fixins and sides to be reheated the next day. At 4:00am he fired up the smokers until they reached temperature. The meats were cooked low and slow for many hours at 250 degrees until they reached perfection.
The order was delivered on location at 11:30am. The buffet was opened on time at 12:00 noon and our staff served the guests the best barbecue on Long Island.
